Green Tomatoes

Every year my customers ask for green tomatoes! They make amazing things with them (relishes, chutneys, and the like). Others buy a few boxes of red and a few of green, in order to stagger their processing efforts: first the really ripe tomatoes and any with cracks, next those that started out orange but have turned red, and last the green tomatoes they've let ripen up in a single layer. 

Early in the year, we start our own tomatoes in the greenhouse from seed, then plant the starts outside in raised beds when the weather is warm enough. If you haven't tried to bread and fry green tomatoes for yourself, it's time!
